Ingredients

For the Pie Crust
  • 1 prepared 9-inch pie crust homemade or store-bought
For the Strawberry Filling
  • 2 pounds fresh strawberries washed and hulled
  • ¾ cup granulated sugar
  • ¾ cup water
  • 1 teaspoon lemon juice
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
  • Optional Whipped Cream Topping
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Method

Step 1: Bake the Pie Crust
  1. Preheat your oven to 450°F (232°C).
  2. Roll out the pie dough and fit it into a 9-inch pie plate. Fold and crimp the edges as desired. Dock the bottom of the crust by poking holes with a fork.
  3. Bake for 10–12 minutes, or until lightly golden. Remove from the oven and allow it to cool completely.
Step 2: Prepare the Strawberries
  1. Hull and clean all strawberries thoroughly.
  2. Reserve approximately ¾ pound of strawberries for the glaze. Slice the remaining strawberries into quarters or bite-sized pieces and place them in a large bowl.
Step 3: Make the Strawberry Glaze
  1. In a medium saucepan, combine:
  2. ¾ pound strawberries
  3. ¾ cup sugar
  4. ¾ cup water
  5. 1 teaspoon lemon juice
  6. Bring the mixture to a boil over medium-high heat. Cook for about 3 minutes, stirring frequently and breaking up the berries.
  7. Strain the mixture through a fine sieve, pressing gently to extract as much liquid as possible.
  8. Measure the liquid and adjust with water if needed until you have approximately 12 ounces.
Step 4: Thicken the Glaze
  1. Return the strained liquid to the saucepan.
  2. Mix the cornstarch and cold water together to form a slurry.
  3. Bring the strawberry liquid to a boil and whisk in the slurry. Continue cooking until the mixture thickens and reaches a full boil.
  4. Remove from the heat immediately once thickened.
Step 5: Combine the Filling
  1. Pour the hot strawberry glaze over the sliced strawberries.
  2. Gently fold everything together until the berries are evenly coated.
Step 6: Fill the Pie
  1. Transfer the strawberry mixture into the cooled pie shell.
  2. Spread the filling evenly and smooth the top.
Step 7: Chill
  1. Refrigerate the pie for 4–6 hours or until fully set.
  2. For the best texture, serve within 24 hours.
Step 8: Add Whipped Cream
  1. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Pipe or spoon the whipped cream around the edges of the pie before serving.
