  • 1 tablespoon plus 2 teaspoons active dry yeast
  • 1 large egg
  • ¼ cup plus 1 tablespoon granulated sugar

  • 1 tablespoon plus ½ teaspoon fine sea salt
  • 4⅔ cups bread flour
  • ¾ cup plus 1 tablespoon unsalted butter fully softened
For the Filling
  • ¾ cup plus 2 tablespoons unsalted butter softened
  • ¼ cup dark brown sugar
  • teaspoons fine sea salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 cup packed light brown sugar
For the Egg Wash
  • 1 large egg
  • 2 tablespoons whole milk
  • Optional Topping
  • Pearl sugar

Method
 

Step 1: Activate the Yeast
  1. Warm the milk until it’s just lukewarm—not hot. Pour it into the bowl of a stand mixer and stir in the active dry yeast. Allow it to dissolve before adding the remaining ingredients.
Step 2: Mix the Dough
    Add:

    2. Granulated sugar
    3. Cardamom
    4. Sea salt
    5. Using the dough hook attachment, begin mixing on low speed.

    7. Once incorporated, add the softened butter.
