  • 2 medium yellow onions finely diced
  • 3 tablespoons unsalted butter
  • Salt to taste
  • 3 tablespoons light brown sugar
  • 1 tablespoon water
  • 2 tablespoons balsamic vinegar
For the Herby Mayo
  • 1 cup good-quality mayonnaise
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons thinly sliced chives
  • 2 teaspoons fresh thyme finely chopped
  • 1 tablespoon finely chopped capers
  • 2 tablespoons finely diced dill pickles
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 garlic clove finely grated
  • 2 teaspoons freshly grated horseradish optional
  • Salt to taste
  • Freshly cracked black pepper
For the Steak
  • 2 well-marbled New York strip steaks about 1–1½ inches thick
  • Kosher salt
  • Vegetable canola, or avocado oil
  • 4 tablespoons unsalted butter
  • 2 lightly crushed garlic cloves optional
  • Fresh thyme sprigs optional
  • Freshly cracked black pepper
  • Flaky salt for finishing
Herb Salad
  • Thinly sliced red onion
  • Fresh parsley leaves
  • Chives cut into 1-inch pieces
  • Zest of 1 lemon
For Assembly
  • 8 slices of bread baguette, ciabatta, or sandwich rolls
  • Unsalted butter for toasting

Method
 

Step 1: Make the Onion Jam
  1. Heat the butter in a medium saucepan over medium heat.
  2. Add the diced onions along with a generous pinch of salt. Cook slowly, stirring often, until the onions soften and begin to caramelize, about 10–15 minutes.
  3. If they become too dark, stir in a tablespoon of water to loosen the pan.
  4. Add the brown sugar, water, and balsamic vinegar.
  5. Continue cooking until the liquid reduces into a thick, glossy onion jam, about 5–10 more minutes.
  6. Taste and season with additional salt if needed.
  7. Set aside.
Step 2: Prepare the Herby Mayo
  1. In a bowl, combine:
  2. Mayonnaise
  3. Parsley
  4. Chives
  5. Thyme
  6. Capers
  7. Dill pickles
  8. Lemon zest
  9. Lemon juice
  10. Garlic
  11. Horseradish (if using)
  12. Season generously with salt and black pepper.
  13. Mix until completely smooth.
  14. Refrigerate until ready to use.
Step 3: Season the Steak
  1. Pat the steaks dry with paper towels.
  2. Season generously on both sides with kosher salt.
  3. If time allows, refrigerate the seasoned steaks overnight on a wire rack for even better flavor.
  4. Allow the steaks to sit at room temperature for about 30 minutes before cooking.
Step 4: Sear the Steak
  1. Heat a stainless-steel skillet over medium-high heat.
  2. Add enough oil to lightly coat the bottom of the pan.
  3. Once hot, add the steaks.
  4. Cook for 2–3 minutes before flipping.
  5. Reduce the heat to medium.

  14. Rest for at least 5 minutes.
Step 5: Prepare the Herb Salad
  1. Combine:

  3. Fresh parsley
  4. Chives
  5. Lemon zest
  6. Toss gently until evenly mixed.
Step 6: Toast the Bread
  1. Heat butter in a large skillet over medium heat.
  2. Toast the bread cut-side down until deeply golden and crisp.
  3. Work in batches if needed.
Step 7: Slice the Steak
  1. Trim away any excess fat.
  2. Slice the rested steak against the grain into thin or medium slices.
  3. Season lightly with flaky salt and freshly cracked black pepper.
  4. Step 8: Assemble the Sandwich
  5. Spread a generous layer of herby mayo on the bottom piece of bread.
