  • 2 tablespoons vegetable oil
  • For the Vegetables
  • 1 stalk celery thinly sliced
  • 1 wedge green cabbage thinly sliced
  • 1 medium carrot julienned
  • Small piece onion thinly sliced
  • 1 tablespoon fresh ginger grated
  • For the Lo Mein Sauce
  • 1 tablespoon sugar
  • 4 teaspoons reduced-sodium soy sauce
  • ½ teaspoon dark soy sauce
  • ½ teaspoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon white wine or rice wine
  • For Stir-Frying
  • 2 to 3 tablespoons vegetable oil

Method

  1. Step 1: Cook the Noodles
  2. Bring a large pot of water to a boil and cook the linguine according to package instructions, but reduce the cooking time by about 2 minutes.
  3. Drain the noodles and rinse thoroughly under cold water to stop the cooking process and remove excess starch.
  4. Return the noodles to the pot and toss with 2 tablespoons vegetable oil to prevent sticking.
  5. Step 2: Prepare the Vegetables
  6. Thinly slice the celery on a diagonal.
  7. Slice the cabbage into strips roughly the same length as the noodles.
  8. Julienne the carrot into thin matchsticks.
  9. Thinly slice the onion.
  10. Grate the ginger until you have about 1 tablespoon.
  11. Place all prepared vegetables in a bowl and set aside.
  12. Step 3: Make the Sauce
  13. In a small bowl, combine:
  14. Sugar
  15. Soy sauce
  16. Dark soy sauce
  17. Sesame oil
  18. Oyster sauce
  19. White wine
  20. Whisk until the sugar begins dissolving and the sauce is well combined.
  21. Step 4: Stir-Fry the Vegetables
  22. Heat a large skillet or wok over medium-high heat.
  23. Add 2 to 3 tablespoons vegetable oil.
  24. Once hot, add the celery, cabbage, carrot, onion, and ginger.
  25. Stir-fry for about 2 minutes, until the vegetables begin to soften and the cabbage wilts.
  26. Step 5: Add the Noodles
  27. Add the prepared noodles to the skillet.
  28. Toss well with the vegetables and continue cooking until the noodles are heated through.
  29. Step 6: Finish with the Sauce
  30. Give the sauce one final stir and pour it over the noodles.
  31. Continue tossing and cooking until the sauce thickens slightly and evenly coats all of the noodles.
  32. Remove from heat and serve immediately.
