Ingredients

For the Homemade Beef Stock
  • Several onions quartered
  • 1 whole head garlic halved
  • Marrow bone
  • Beef bones
  • Carrots
  • Celery
  • Water
For the Soup
  • Vidalia onions
  • White onions
  • Shallots
  • Butter
  • Salt
  • Brown sugar
  • Homemade beef stock
  • White wine
  • Freshly cracked black pepper
  • Bay leaves
  • Fresh thyme
For the Topping
  • Day-old baguette
  • Garlic clove
  • Gruyère cheese
  • Comté cheese
  • Fontina cheese

Method

Step 1: Make the Homemade Beef Stock
  1. Place the onions, garlic, beef bones, marrow bone, carrots, and celery into a large stockpot. Cover with enough water to completely submerge the vegetables.
  2. Bring to a gentle simmer and cook for several hours. Every 30 minutes, skim away any foam that rises to the surface to create a cleaner, clearer broth.
  3. Once finished, strain the stock and set it aside.
Step 2: Slice the Onions
  1. Peel and slice the Vidalia onions and white onions into evenly thick slices from top to bottom.
  2. Trim and slice the shallots into even pieces.
  3. Keeping the onions slightly thick helps them maintain texture after hours of cooking.
Step 3: Soften the Onions
  1. In a large heavy-bottomed pot, melt the butter over medium-low heat.
  2. Add all of the onions along with a pinch of salt.
  3. Stir until coated in butter, then cover and cook until the onions become soft and translucent.
Step 4: Slowly Caramelize
  1. Sprinkle in the brown sugar.
  2. Continue cooking uncovered for 45 minutes to 1 hour, stirring regularly.
  3. Allow the onions to develop deep golden-brown color while scraping the browned bits from the bottom of the pot.
  4. Whenever necessary, add a small splash of beef stock to deglaze and incorporate every bit of flavor.
  5. Continue cooking until the onions become dark, jam-like, and intensely sweet.
Step 5: Build the Soup
  1. Pour in the white wine and allow it to reduce significantly.
  2. Add the strained homemade beef stock.
  3. Season with:
  4. Black pepper
  5. Bay leaves
  6. Fresh thyme
  7. Cover and simmer gently for about 45 minutes so all the flavors blend together.
  8. Before serving, stir in a little more butter and adjust the seasoning with salt and pepper.
Step 6: Prepare the Bread
  1. Slice the baguette diagonally.
  2. Rub each slice lightly with a cut garlic clove.
  3. Toast the bread until lightly crisp.
Step 7: Prepare the Cheese
  1. Grate together:
  2. Gruyère
  3. Comté
  4. Fontina
  5. Mix the cheeses thoroughly for the perfect balance of flavor, nuttiness, and stretch.
Step 8: Assemble
  1. Fill oven-safe soup bowls with the hot soup.
  2. Place two toasted baguette slices on top.
  3. Cover generously with the mixed cheeses.
  4. Finish with a fresh sprig of thyme.
  5. Broil until the cheese becomes bubbly, melted, and beautifully golden brown.
  6. Serve immediately.
