Method
 

Step 1: Make the Homemade Beef Stock
  1. Place the onions, garlic, beef bones, marrow bone, carrots, and celery into a large stockpot. Cover with enough water to completely submerge the vegetables.
  2. Bring to a gentle simmer and cook for several hours. Every 30 minutes, skim away any foam that rises to the surface to create a cleaner, clearer broth.
  3. Once finished, strain the stock and set it aside.
Step 2: Slice the Onions
  1. Peel and slice the Vidalia onions and white onions into evenly thick slices from top to bottom.
  2. Trim and slice the shallots into even pieces.
  3. Keeping the onions slightly thick helps them maintain texture after hours of cooking.
Step 3: Soften the Onions
