  • 2 pounds ground beef 80/20

  • Freshly ground black pepper
  • 8 slices cheddar cheese
For the Burger Sauce
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons ketchup
  • 2 tablespoons finely chopped pickles
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
For the Caramelized Onions
  • 2 large onions thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • Salt
  • Quick Pickles
  • 1 cucumber thinly sliced
  • ½ cup vinegar
  • ½ cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 garlic cloves
  • ½ teaspoon peppercorns
For Assembly
  • 4 sesame burger buns
  • Iceberg lettuce
  • Tomato slices
  • Thinly sliced red onion

Method
 

Prepare the Sauce
  1. Mix all sauce ingredients until smooth. Refrigerate while preparing the remaining components.
Make the Quick Pickles
  1. Heat the vinegar, water, sugar, and salt until dissolved. Pour over sliced cucumbers with garlic and peppercorns. Let cool completely.
Caramelize the Onions
  1. Cook onions slowly in butter and oil over low heat for 30–40 minutes, stirring often until deeply golden and sweet.
Shape the Patties
  1. Divide the beef into eight equal portions and gently form thin patties slightly larger than the buns. Press a shallow indentation into the center of each.
