Method
Prepare the Sauce
- Mix all sauce ingredients until smooth. Refrigerate while preparing the remaining components.
Make the Quick Pickles
- Heat the vinegar, water, sugar, and salt until dissolved. Pour over sliced cucumbers with garlic and peppercorns. Let cool completely.
Caramelize the Onions
- Cook onions slowly in butter and oil over low heat for 30–40 minutes, stirring often until deeply golden and sweet.
Shape the Patties
- Divide the beef into eight equal portions and gently form thin patties slightly larger than the buns. Press a shallow indentation into the center of each.
Cook the Burgers
- Season generously with salt and pepper. Cook in a hot skillet or on a griddle for 3–4 minutes per side. Top each patty with cheese during the final minute and cover briefly to melt.
Toast the Buns
- Spread butter on the cut sides of the buns and toast until lightly crisp and golden.
Assemble
- Spread burger sauce on the bottom bun, then layer lettuce, tomato, one cheeseburger patty, pickles, the second cheeseburger patty, caramelized onions, red onion, a little extra sauce, and the top bun.
