Ingredients
  

For the Omelet
  • 5 –6 large eggs
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons finely chopped scallions
  • 2 tablespoons finely diced carrot
  • 2 tablespoons finely diced onion optional
  • 1 tablespoon cooking oil
For the Cheesy Version
  • 2 string cheese sticks or
  • ½ cup shredded mozzarella cheese

Method
 

Step 1: Beat the Eggs
  1. Crack the eggs into a mixing bowl and whisk until the yolks and whites are fully combined. Season with salt and black pepper.
  2. The eggs should become smooth and slightly frothy for the fluffiest texture.
Step 2: Prepare the Vegetables
  1. Finely chop the scallions, carrots, and onion.
  2. Keeping the vegetables very small helps the omelet roll smoothly without creating large bumps.
  3. Mix the vegetables into the beaten eggs.
Step 3: Heat the Pan
  1. Place a non-stick frying pan over low heat.
  2. Lightly coat the surface with cooking oil using a brush or paper towel. The oil should cover the pan evenly without pooling.
Step 4: Cook the First Layer
  1. Pour a thin layer of the egg mixture into the pan.
  2. Tilt the pan until the eggs evenly cover the surface.
  3. Allow the eggs to cook until they are about 60–70% set.
Step 5: Roll the Omelet
  1. Starting from one edge, gently roll the egg toward the opposite side.
  2. Leave the rolled portion in the pan.
  3. Brush on another light coating of oil if needed.
  4. Pour another thin layer of egg into the empty section of the pan, lifting the roll slightly so the fresh egg flows underneath.
  5. When the new layer is partially cooked, continue rolling.
  6. Repeat this process until all the egg mixture has been used.
Step 6: Make the Cheesy Version
  1. Prepare another omelet using the same method.
  2. Before making the final roll, place string cheese or shredded mozzarella near one edge.
  3. Roll carefully while the eggs are still slightly soft so the cheese seals inside.
  4. Cook another minute over low heat until the cheese melts completely.
Step 7: Slice and Serve
  1. Transfer the finished omelet to a cutting board.
  2. Trim the ends if desired for a cleaner presentation.
  3. Slice into bite-sized rounds and serve warm.
