Ingredients
  

For the Salad
  • 1 large English cucumber sliced into half-moons
  • 2 medium ripe tomatoes cut into wedges
  • 1 red bell pepper sliced
  • ½ medium red onion thinly sliced
  • ½ cup Kalamata olives halved
  • 7 ounces feta cheese crumbled
For the Dressing
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Zest of ½ lemon
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons honey mustard
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh thyme
  • ½ teaspoon sea salt or to taste
  • Freshly ground black pepper

Method
 

Step 1
  1. Prepare all of the vegetables by washing and drying them thoroughly. Slice the cucumber, tomatoes, bell pepper, and onion into bite-sized pieces.

  1. Place the vegetables in a large serving bowl and add the Kalamata olives.

  1. Scatter most of the crumbled feta over the vegetables, reserving a little for garnish.

  1. In a small jar or bowl, combine the olive oil, red wine vinegar, lemon zest, lemon juice, honey mustard, oregano, thyme, salt, and black pepper.
  2. Whisk or shake until the dressing becomes well combined.

  1. Pour the dressing over the salad and gently toss until every ingredient is lightly coated.

  1. Finish with the reserved feta and a sprinkle of fresh oregano before serving.
