  • 1 tablespoon baking powder
  • 1 teaspoon salt or ½ teaspoon if preferred
Wet Ingredients
  • 1 cup 200 g granulated sugar
  • ½ cup 113 g unsalted butter, melted
  • ¼ cup 60 g sour cream
  • cups 300 ml whole milk, room temperature
  • 2 large eggs room temperature
  • 1 tablespoon vanilla extract
Mix-In
  • cups 270 g semi-sweet chocolate chips
Optional Topping
  • Extra chocolate chips for sprinkling over the batter before baking

Method

Step 1: Prepare the Oven
  1. Preheat your oven to 425°F (220°C).
  2. Line a standard 12-cup muffin pan with paper liners. Bakery-style tulip liners work especially well if you want taller muffins.
Step 2: Mix the Dry Ingredients
  1. In a large bowl, combine:
  2. Flour
  3. Baking powder
  4. Salt
  5. Whisk everything together until evenly mixed. Sifting the flour is optional but helps create a lighter texture.
Step 3: Mix the Wet Ingredients
  1. In another large bowl combine:
  2. Sugar
  3. Melted butter
  4. Sour cream
  5. Slowly whisk in the room-temperature milk until smooth.
  6. Add:
  7. Eggs
  8. Vanilla extract
  9. Continue whisking until fully combined.
Step 4: Combine Wet and Dry Ingredients
  1. Pour the wet ingredients into the bowl of dry ingredients.
  2. Using a rubber spatula, gently fold the batter together.
  3. Mix only until a few streaks of flour remain.
  4. Avoid overmixing.
Step 5: Fold in Chocolate Chips
  1. Add the chocolate chips.
  2. Carefully fold them into the batter until evenly distributed.
  3. The batter should remain thick.
Step 6: Fill the Muffin Pan
  1. Divide the batter evenly among the 12 muffin cups.
  2. Fill each cup almost to the top.
  3. Sprinkle a few extra chocolate chips over each muffin for a bakery-style finish.
Step 7: Bake
  1. Bake at 425°F (220°C) for 5 minutes.
  2. Without opening the oven, reduce the temperature to 350°F (175°C).
  3. Continue baking for 20 minutes, or until:
  4. Muffins are golden brown
  5. Tops are nicely domed
  6. A toothpick inserted into the center comes out clean (except for melted chocolate)
  7. Step 8: Cool
  8. Allow the muffins to cool in the pan for several minutes.
  9. Transfer them to a wire rack to finish cooling before serving.
