2 large eggs
1 kg / 2 lb ground beef (85/15 recommended)
1 cup (60–70 g) panko breadcrumbs
2 tsp salt
1 tsp black pepper
1 tsp sweet paprika
2 garlic cloves, grated
1 large onion, grated
Handful of fresh parsley, chopped
2–3 sprigs fresh thyme (or 1 tsp dried thyme)
1 tbsp Worcestershire sauce
3 tbsp ketchup

1/2 cup ketchup
1 tbsp brown sugar
1 tbsp white or apple cider vinegar
1/2 tsp black pepper
1/2 tsp garlic powder

Directions
- Prepare the Meat Mixture
In a large bowl, add the eggs, ground beef, panko breadcrumbs, salt, black pepper, sweet paprika, grated garlic, grated onion, chopped parsley, and thyme. Pour in Worcestershire sauce and ketchup. Mix everything very thoroughly using your hands until the mixture is well combined and slightly sticky. - Shape the Meatloaf
Lightly grease a loaf pan with oil. Transfer the meat mixture into the pan and press it down gently so it’s evenly packed and smooth on top. - Make the Glaze
In a small bowl, mix ketchup, brown sugar, vinegar, black pepper, and garlic powder until smooth. Brush a generous layer of the glaze over the top of the meatloaf - First Bake
Place the loaf pan into a preheated oven at 180°C / 360°F. Bake for 1 hour, allowing the meatloaf to cook through and develop flavor. - Prepare the Potatoes (Optional Side)
While the meatloaf bakes, peel and cut potatoes into chunks. Boil them in salted water until tender, about 18 minutes. Drain and set aside. - Final Glaze and Bake
Remove the meatloaf from the oven and brush it with the remaining glaze. Return it to the oven and bake for an additional 20 minutes until glossy and slightly caramelized. - Mash the Potatoes
Add butter and milk to the cooked potatoes and mash until smooth and creamy. - Serve
Let the meatloaf rest briefly, then slice and serve warm with mashed potatoes on the side.
