kcalIngredients
2 flatbreads or naan
115 grams brie cheese, sliced
30 grams dried cranberries
30 grams sliced almonds, toasted
15 milliliters olive oil
15 milliliters honey
1 teaspoon fresh thyme leaves (optional)
Pinch of sea salt
Pinch of cracked black pepper
Directions
- Prepare the flatbreads
Place the flatbreads on a large rimmed baking sheet. If the bread is very soft, let it sit uncovered briefly so excess moisture can evaporate, which helps it crisp better in the oven. - Brush with olive oil
Using a pastry brush or the back of a spoon, spread olive oil evenly over the surface of each flatbread. Make sure the oil reaches all the way to the edges to encourage even browning. - Add the brie
Arrange thin slices of brie evenly across each flatbread. The rind does not need to be removed, as it melts smoothly during baking. - Add toppings
Scatter the dried cranberries and toasted sliced almonds evenly over the brie so every slice gets a mix of toppings. Sprinkle fresh thyme leaves on top if using. - Bake until crisp and bubbly
Bake in a preheated oven at 200°C (400°F) for 8–10 minutes. Watch closely to prevent burning. The flatbread is ready when the cheese is melted and the edges are golden and crisp. - Finish and serve
Remove the flatbreads from the oven and let them rest briefly. Drizzle honey over the warm surface, then finish with a light sprinkle of sea salt and cracked black pepper. Slice with a sharp knife or pizza cutter and serve warm or at room temperature.

Notes
- Let the flatbread rest for about one minute after baking so the honey absorbs slightly instead of running off the edges.
