Directions
- Cook the Bacon
Bake the bacon until crispy, about 10–12 minutes. Once cooked, set the bacon aside and reserve the bacon grease, as it will be used later to add flavor when cooking the burgers. - Make the Burger Sauce
In a bowl, combine mayonnaise, mustard, hot sauce (such as sriracha), and chopped pickles. Mix well until smooth and creamy. Taste and adjust the seasoning or heat level if needed, then set the sauce aside. - Caramelize the Onions
Heat about 2 tablespoons of olive oil in a skillet over medium-low heat. Add sliced onions and cook slowly, stirring often, until soft, golden, and caramelized. This process takes about 10–15 minutes. Remove from heat and set aside. - Season and Form the Beef Patties
Place the ground beef in a bowl and sprinkle evenly with the homemade burger seasoning. Mix gently by hand until well combined. Form the meat into two flattened patties, shaping them into round discs. - Cook the Burgers
Heat a cast iron skillet until very hot. Add a small amount of oil along with the reserved bacon grease. Place the beef patties into the skillet and press lightly with a spatula to ensure even cooking. Cook for about 5 minutes per side, depending on thickness, until juicy and fully cooked. - Add the Cheese
Once the burgers are cooked, place cheese slices directly on top of each patty. Allow the cheese to melt before removing the burgers from the skillet. - Assemble the Crunch Wrap
Heat another cast iron skillet with a drizzle of oil. Place a large tortilla in the skillet to soften slightly. Spread burger sauce over the center, then layer cheese slices, the cooked burger patty, bacon, diced pickles, caramelized onions, and additional cheese. Place a smaller tortilla on top. - Fold and Grill
Carefully fold the edges of the large tortilla over the filling, enclosing it completely. Flip the wrap seam-side down and cook until golden brown and crispy. Flip again to toast the other side evenly. - Slice and Serve
Remove the crunch wrap from the skillet, slice it in half, and serve hot while the cheese is melted and the tortilla is crisp.

Notes
- For easier folding, warm the tortillas well before assembling so they stay soft and don’t crack when wrapped.
