  • 4 chicken breasts

  • ½ teaspoon dried basil

  • ½ teaspoon dried oregano

  • 1½ teaspoons garlic (about a little more than 1 clove)

  • About 1¼ cups marinara sauce

  • Mozzarella cheese (about 1½ cups suggested; adjust as needed)

  • Pasta (penne or spaghetti)

  • Parmesan cheese (optional, for topping)

Directions

  • Season the Chicken
    Place four chicken breasts in a bowl. In a small dish, mix together ½ teaspoon basil and ½ teaspoon oregano. Lightly coat each chicken breast on both sides with the seasoning mixture, distributing it as evenly as possible.
  • Add Garlic and Marinara Sauce
    Add about 1½ teaspoons of garlic (a little more than one clove) to the chicken. Pour approximately 1¼ cups of marinara sauce over the chicken, making sure the pieces are covered. There is no need to completely fill the slow cooker—just ensure the chicken is well coated.
  • Slow Cook
    Cover the crockpot and cook on low for about 6 hours, or until the chicken is fully cooked and tender.
  • Transfer and Add Mozzarella
    Once cooked, remove the chicken from the crockpot and place it in an oven-safe pan. Top each piece with mozzarella cheese, using enough so that every piece has a layer of cheese on top.
  • Broil Until Cheese Melts
    Place the pan under the broiler just long enough to melt the mozzarella and warm it through. The chicken is already cooked, so this step is only to melt the cheese.
  • Prepare the Pasta
    While the cheese is melting, cook your preferred pasta according to package instructions. Penne or spaghetti both work well.
  • Assemble and Serve
    Drain the pasta and toss it with a little additional marinara sauce. Place the cheesy chicken on top of the pasta. If desired, sprinkle extra mozzarella or Parmesan cheese over the finished dish before serving.
