Creamy Hot Sausage Dip with Rotel and Cream Cheese

This creamy hot sausage dip is a crowd-pleasing appetizer that’s perfect for game day or any casual gathering. Savory browned sausage is combined with tomatoes and green chilies, then blended with smooth cream cheese to create a rich, scoopable dip with plenty of bold flavor.

The recipe is simple and flexible. You can adjust the heat level by choosing different varieties of sausage or Rotel, and it pairs beautifully with crunchy tortilla chips. Once everything is melted together on the stove, the dip is transferred to a small slow cooker to keep it warm and ready for guests to enjoy.

Ingredients

  • 1 package hot sausage

  • 2 packages cream cheese (Neufchâtel or preferred variety)

  • 1 can Rotel (10 oz)

  • Tortilla chips (such as Tostitos) for serving

Directions

  • Brown the sausage
Place the sausage in a skillet over heat. Break it apart as it cooks and brown it thoroughly until no pink remains.
  • Drain the meat
Once the sausage is fully browned, transfer it to a colander and drain off the excess grease. Return the drained sausage to the skillet.
  • Add tomatoes and chilies
Pour the can of Rotel over the sausage. Reduce the burner to medium or medium-high so the mixture can heat without scorching.
  • Add the cream cheese
Add both packages of cream cheese to the skillet. Stir continuously as it softens and begins to melt.
  • Stir until smooth
Keep stirring until the cheese is completely melted and everything is evenly combined into a creamy dip.
  • Move to the slow cooker
Turn off the stove and carefully transfer the dip into a small crock pot. It should nearly fill it to the top.
  • Keep warm and serve
Place the lid on and keep the dip on warm or low heat so guests can help themselves throughout the party. Serve with tortilla chips for dipping.

Notes

  • Keeping the dip in a crock pot makes it ideal for parties, since it stays warm, creamy, and ready to scoop for a long time.
