8 Maris Piper potatoes (small to medium, approx. 100 g each)
2 tablespoons unsalted butter, melted
2 tablespoons olive oil
2 cloves garlic, minced (or ½ teaspoon garlic powder)
½ teaspoon dried thyme
¼ teaspoon black pepper
¼ teaspoon paprika
¼ teaspoon salt
Fresh thyme leaves (for garnish)

Directions
- Preheat the Oven
Begin by preheating your oven to 200°C (400°F). - Prepare the Potatoes
Use eight small-to-medium Maris Piper potatoes (about 100g each). To create the Hasselback slices, place two wooden spoons on either side of one potato and make thin, even cuts about 2 mm apart. The spoons help prevent slicing all the way through. Repeat with all potatoes. - Arrange in a Baking Dish
Place the cut potatoes into a shallow ovenproof dish or roasting tray. A cast iron pan works well, but any dish is fine as long as there is space between each potato. - Make the Garlic Butter Mixture
In a bowl, combine 2 tablespoons melted unsalted butter, 2 tablespoons olive oil, 2 minced garlic cloves (or ½ teaspoon garlic powder), ½ teaspoon dried thyme, and ¼ teaspoon each of black pepper, paprika, and salt. Stir to combine. - Coat the Potatoes
Drizzle the garlic butter mixture all over the potatoes, ensuring it seeps between the slices. - Roast and Baste
Transfer the baking dish to the oven and bake for 1 hour to 1 hour 10 minutes, until tender and golden. While roasting, baste the potatoes 2–3 times with the butter mixture or juices in the tray. - Finish and Serve
Once done, sprinkle fresh thyme leaves and a little Maldon salt on top before serving.
