  • 5 garlic cloves

  • 3 lb / 1.4 kg baked potatoes (about 5–6 large potatoes)

  • 2 tbsp sour cream or crème fraîche (room temperature)

  • Salt, to taste

  • Black pepper, to taste

  • Pinch of nutmeg

  • Chives, optional (for garnish)

Directions

  • Melt Butter and Sauté Garlic
    In a 10-inch (25 cm) nonstick skillet, melt the butter over medium-low heat. Add the garlic cloves and cook gently until they turn golden brown, releasing their aroma. Be careful not to burn the garlic, as this will affect the flavor.
  • Prepare the Potatoes
    Cut the baked potatoes in half and scoop out the flesh onto a cutting board. Chop the potato flesh into medium-sized pieces, keeping some texture rather than mashing completely.
